Recipe: Fried milk

Fried Milk, or otherwise known as Leche frita, is a very popular and delicious Spanish dessert found across Spain. The origin of this dessert is murky as many different countries, both in Asia and Europe, have similar dessert concepts, all dating back centuries.

Although the name can be very misleading, fried milk is actually a sweet, firm cold-milk pudding encased in a warm crunchy shell. So, it isn’t fried milk, per se. This dessert is quite similar to the Chinese custard-like milk dessert, zha xian nai or chow lai, and has become a big craze in a lot of Asian countries.

If you’re too lazy to get out of the house but still want to get your hands on one of these bad boys— you can try this recipe out by yourself!

So, here goes the Recipe: Fried milk.

Ingredients:

  • ½ cup granulated sugar
  • ½ cup cornstarch
  • ¼ teaspoon ground nutmeg
  • 3 cups of milk
  • 1 tablespoon butter or margarine
  • ¼ teaspoon grated lemon peel
  • 2 eggs, well beaten
  • ¾ cup plain bread crumbs
  • Vegetable oil
  • Powdered sugar, if desired

Instructions:

  1. Mix the granulated sugar, cornstarch and nutmeg in a saucepan. Gradually stir in the milk while boiling the saucepan over medium heat. Continue stirring and boiling for 1 minute.
  2. Remove saucepan from heat, and stir in the butter/margarine and grated lemon peel.
  3. Pour and spread the mixture evenly in a square baking dish. Refrigerate for 3 hours until it becomes firm.
  4. Cut the firm mixture into small cubes with a wet knife and dip them into the beaten eggs. Cover the cubes in breadcrumbs. Repeat this for all cubes.
  5. Pour about 1 to ½ inch of oil into a pan, and heat to 183 deg Celcius. Fry 2-3 cubes at a time until they turn light brown (approximately 1-2 minutes).
  6. Sprinkle with powdered sugar, enjoy!
